Avocado and Feta on Toast with a Kick

Last winter, I spent a few months working in a sweet shop. Two days a week, I would take photos of every single sweet in the shop. It took months and it was a dream job for a sweet tooth like me! My children also thought I was the best mum ever, especially when it was their turn to be my ‘assistant’ on Sunday mornings. We would eat sweets all morning (erm, take photos of sweets…) and brunch on ‘avocado feta toast’ together.

Whenever I worked at Sweet as a Button, I would also go to Fred and Ginger Coffee, the café next door, you see. They serve a mean latte and their food is fresh and delicious. My favourite treat whenever I went there was avocado topped with Feta cheese, served on a thick slice of bread.

'Avocado Feta Toast' is my ultimate brunch. This open sandwich is full of flavours yet quick and simple to make, with wholesome ingredients.

As I was baking a loaf of my seeded bread last week, I rummaged through the fridge and cupboards and found the ingredients I was after: avocado, Feta cheese, black pepper and hot chilli powder.

This ‘tartine’ or open sandwich, works beautifully on any kind of bread, whether you’re into white crusty bread, wholemeal or seeded bread. It takes minutes to put together and it is quite simply scrumptious.

Avocado and Feta on Toast with a Kick

Course Breakfast, brunch, lunch
Prep Time 5 minutes
Cook Time 3 minutes
Total Time 8 minutes
Servings 1

Ingredients

  • Two thick slices of freshly made or shop-bought artisan bread
  • 1 ripe avocado
  • 70 g Feta cheese , crumbled
  • Pinch freshly ground black pepper
  • Pinch hot chilli powder

Instructions

  1. Cut the avocado in 2, remove the stone and scoop out the flesh into a plate. Mash with a fork. Spread on the bread.

  2. Crumble the Feta cheese over the avocado, sprinkle hot chilli powder and pepper.

  3. Place under the grill on a baking sheet for 3 minutes.

  4. Enjoy straight away.
