Peanut Butter Oreo Cupcakes

These Peanut Butter Oreo Cupcakes are quick and simple to make: an easy recipe for children to have fun with.

Crevette and Beanie love getting involved in the kitchen. When I suggested making Cookie Monster cupcakes on Sunday, they were excited, but also bemused as they remembered our huge cake decorating fail earlier this year when we made a really ugly (but delicious) Cookie Monster cake.

This time, we would make peanut butter Oreo cupcakes. We got started when Jumpy went for a nap, just to make sure she would not get in contact with the peanut butter, or any of the utensils we were using, since she is allergic to nuts.

Before we got started, Beanie and Crevette each tried one of the limited edition Peanut Butter cookies. Beanie adored them (her words) but Crevette was not a fan.

The children placed an Oreo at the base of each cupcake case and we made the cupcake batter. It was scrumptious and we had a fight to decide who would lick the bowl. Beanie won!

Peanut butter and Cake batter went into the cupcake cases and I made the icing whilst the cupcakes were baking.

Although he did not like the peanut butter Oreo on their own, Crevette really loved our cupcakes with the crunchy base.

We then turned some of our cupcakes into Cookie Monsters.

Peanut Butter Oreo Cupcakes

Prep Time 20 minutes
Cook Time 20 minutes
Servings 12

Ingredients

For the Cupcakes

  • 12 Peanut butter Oreos
  • 12 teaspoons smooth peanut butter
  • 1/4 cup butter 60g, softened
  • 3/4 cups granulated sugar 175g
  • 1 medium free-range egg
  • ½ teaspoon vanilla extract
  • 1 heaped tablespoon cream cheese
  • 3/4 cups plain flour 100g
  • 1/4 cup cocoa powder 25g
  • ½ teaspoon baking powder
  • pinch salt

For the Peanut Butter Icing

  • 3 heaped tablespoons smooth peanut butter 150g
  • ¼ cup butter 60g, at room temperature
  • ½ teaspoon vanilla extract
  • ½ cup icing sugar 60g
  • 2 heaped tablespoons cream cheese 80g
  • Optional:
  • Blue edible glitter
  • Candy eyes
  • 12 Peanut butter Oreos

Instructions

  1. Preheat oven at gas mark 5 (190 degrees Celsius / 375 degrees Fahrenheit).
  2. Line a muffin tin with 12 cupcake cases and place an Oreo and a teaspoon of peanut butter at the base of each one.
  3. In a large bowl, beat the butter and sugar until creamy.
  4. Add the egg and vanilla extract. Mix well. Incorporate the cream cheese.
  5. Add the dry ingredients and mix well.
  6. Add cupcake batter on top of each Oreo & peanut butter. The cupcake cases should be ¾ full.
  7. Smooth the batter with the back of a teaspoon.
  8. Bake in the oven for 15 to 20 minutes, until the cupcakes bounce back when pressed lightly.
  9. In the meantime, make the icing. Start by mixing the peanut butter, butter and vanilla until well-combined and smooth. Add the rest of the ingredients and beat until light and creamy.
  10. Once the cupcakes have cooled down, spread icing over each cupcake.
  11. At this stage, you can turn your cupcakes into cookie monster ones. Place edible glitter in a small bowl and turn each cupcake onto the glitter. It will adhere to the icing. Sprinkle some more glitter if need be. Push a Peanut Butter Oreo into the cupcake to form a mouth and add candy eyes.
  12. Enjoy!

      It didn’t even get anywhere (to my surprise) other than the kids’ tummies (but let’s not dwell on that!).

      I know… I had meant to stop blogging during the summer then I realised I had a list longer than my arm. This blogging thing is addictive, isn’t it?
