OK, confession time… Although I’ve lived in the UK for more than twenty years, I’d never had toad in the hole until we gave Richmond’s meal kit a go. How did I go that long without trying one of the most well-known British staples? No idea. All done now!

As a single mum of four trying to juggle work, clubs, the winter slump and a tight budget, meal times can be pretty hectic. It’s all fine and lovely at the weekend and on days I finish work early enough to collect at 3.20 p.m., but we have a couple of days a night when I just don’t have the time or inclination to cook. Luckily, my 13-year-old is almost always happy to roll up his sleeves and cook for us.
Meal kits are ideal for his cooking sessions as they’re simple and contain everything he needs. The teen even went to the supermarket to buy Richmond ’s Toad in the Hole Meal Kit for us. He couldn’t find it in Tesco or Sainsbury’s but managed to get it in Iceland. He also got us beans, peas and potatoes to make everything that would go with our Toad in the Hole.

The Toad In The Hole Meal Kit contains 10 Richmond pork sausages as well as the batter mix. It serves four and was perfect for our family of five with sides. The Teen was happy the prep included nothing more than finding an ovenproof dish and adding a little water to the batter mix. He also made some mash and I helped him warm up beans and defrost peas. Easy peasy!
I was impressed that all the prep for the Toad in the Hole was done and dusted in under five minutes. All the teen had to do was plop sausages in an ovenproof dish and add a little water to the batter mix.

The result was a light, fluffy giant Yorkshire pudding dotted with sausages. It couldn’t have been simpler. The whole family enjoyed the meal and there were no complaints: a rare occurence with my wannabe food critics.

For all these years in the UK, I’d pictured Toad in the Hole as a bit of a faff and possibly difficult to get 100% right, but I couldn’t have been more wrong: the kit made it as easy as could be (so did the Teen to be fair!).
