Sunshine Smoothie

This morning, we got up earlier than usual. Beanie and Jumpy left with hubby just after 7 a.m. and Wriggly was asleep. Crevette and I had over an hour to ourselves so we decided to make some smoothie for breakfast. We wanted to start our day full of vitamins and energy! Considering I woke up at 3 and 4 a.m. with Wriggly, the boost was much needed. I rock the ‘bags under the eyes’ look!

I am a real newbie when it comes to making smoothies and I do not have the adequate equipment but giving up is not in my nature! My little man and I really wanted to include crushed ice in our smoothie, so we tried putting ice cubes in a freezer bag and bashing them with a rolling pin. We failed miserably and ended up with bits of ice everywhere as the bag burst. No ice, then!

Even with no crushed ice, our smoothies were delicious and they took less than five minutes to make. All you have to do is chop your fruit and blend the four ingredients together. My ancient soup blender did a great job and we enjoyed our healthy treat.

Sunshine Smoothie

A 'Free From', Healthy Treat
Prep Time 5 minutes

Ingredients

  • 1 cup pineapple chunks 150g
  • 1/2 cup chopped mango 75g
  • 1 cup orange juice 250ml
  • 2 tablespoons lemon juice

Instructions

  1. Blend all the ingredients together and enjoy!

    Lovely sounding ingredients! I sooo need a blender…I keep hinting in the hope hubby might surprise me one day but I know it won’t happen!! All I have is a food processor but it wouldn’t cope with doing something like this unless in huge quantities! Ho hum.

      Same here, I just have a food processor and my old soup blender. The latter worked well for this smoothie. A Vitamix would be amazing!

    What a fabulous way to start the day! I love smoothies but go through phases of making them for weeks and then nothing for ages! You’ve inspired me to enter a phase of having them again I think! x

      Banana is also great is smoothies! We use the ‘One ingredient ice cream’ as our base and then add strawberries and juice. Yum!
