Thai Ginger Soup with Cashews & a Vitamix Pro 300 Giveaway

The first time I saw a Vitamix blender in action was also the day I bought my Pro 300 in December. I was with the girls, and as I was going to look at (pat) the Pro 300 for the tenth time that month, it so happened there was a live demonstration there.

Matt Stubbs, who was showing off the shiny machines, declared he was going to make three recipes for us. We had less than ten minutes to spare and I told him I did not need convincing: I wanted a Pro 300 and I was planning to buy one the following month.

As I was about to leave, the first recipe was already on the go, then the second, and the third. In less that 5 minutes, he had put together a green smoothie, strawberry ice cream and one of the best soups I have ever had.

What happened next? We ran to Crevette’s school, got back to John Lewis and bought the Pro 300. The kids were as excited as I was and kept begging me to make ice cream (it was early December).

The recipe I am sharing today is THAT soup, the Thai Ginger Soup with Cashews from the Vitamix demonstrator’s guide. It is to die for, and it takes less than 15 minutes between the time you get the veg out and the hot soup warming you up.

Thai Ginger Soup with Cashews

Thai Ginger Soup with Cashews - a Vitamix Recipe

Total Time 15 minutes
Servings 1 L

Ingredients

  • o 500 ml water
  • o 1 carrot 100 g
  • o 1 slice cabbage 100 g
  • o 1 stick celery 100 g
  • o 1 slice red pepper 20 g
  • o 1 piece courgette 50 g
  • o 1 spring onion 10 g, halved
  • o 1 slice lemon 25 g, unpeeled
  • o 1/2 garlic clove
  • o 1 piece fresh ginger root 10 g, unpeeled
  • o 1 slice chilli 5 g
  • o 100 g cashews
  • o 10 g fresh coriander
  • o 5 ml honey
  • o 1 vegetable stock cube

Instructions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 5 minutes or until heavy steam escapes from the vented lid.
  5. Serve immediately.
  6. This recipe has been written for the C-Series machines with Variable Speed control and Standard 2.0-litre container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.

          Oh no but it sounds lovely! I love often make carrot soup with split peas, onions and a ham shank and I also often make parsnip soup! I love carrot and ginger cake so I know I would enjoy your recipe! I will check it out! Thank you!

    Wow, this does look great my dear. I borrowed a similar machine from a friend when I had people around and it did help a lot. I still do so much by hand…I feel quite old fashioned really! What is the point when you can have all these gadgets these days,
    I would make tons of soups with a machine like that: potatoes, courgettes, carrots and celery are my favourite ingredients for soup. The one you made looks delicious!

    can’t believe you bought it the same day as seeing the demo! Took me alnot a year to justify the cost, but have never looked back 🙂 I’d love an upgrade though… That Thai soup is amazeballs!

    I love Vitamix! Their customer service is amazing! I had to sell mine a few months back to make space and I wasn’t using it, but I didn’t realise how much I’d miss it. All those raw food sweets I used to make. Nut butters too.

    I would go for the Harvest Cheddar soup as I’m a huge cheese fan 🙂

        The only cake I’ve ever made is a Lemon Drizzle cake (which turned out to be very edible). My “job” is usually washing and tidying up (or slicing and dicing)! At the moment we are “processing” our apple crop – apple & chilli jelly already made and, so far, 12 pounds of diced apple into the freezer ready for winter crumbles. After that it will be chutney making, then Christmas puds and then the Christmas cake. Sounds busy doesn’t it?

    I would go straight for the Broccoli Cheese Soup. When my Grandma was alive she would make broccoli and cheese soup in the winter months and it was so delicious that I can close my eyes right now and summon up that flavour, such was the impact it had. Even though she gave me her recipe I could not replicate it, I tried and failed, tried and failed. Maybe it’s just not meant to be, maybe it’s one of those things that only she could do and I am happy it that’s true, but i’d love to have another try, with the helping hand of a Vitamix.

      I love those recipes that really remind you of someone. They never seem the same when you make them yourself though! My mum’s ‘thing’ is salad dressing (seriously addictive) and her stuffed tomatoes. I have the recipes and I follow the same steps yet they never taste exactly like my mum’s.

    Hi Mel – I would try the Thai Ginger with Cashews – love this recipe. But I am very partial to broccoli & stilton, so would give that a go. The sweet potato soup also looks great. Autumn & winter great time for filling soup and fresh bread. Thanks xxx

    Hi, would this blender be suitable for making Humus? I like to use as little oil as possible and sometimes this causes problems when I try to use the blender attachment on my stand mixer, do you have any experience that could help me with this problem? Thanks in advance :0)

      I use mine to make hummus but since I only have a large container, I have to make large quantities. With a smaller container, you could definitely make smaller portions and use as much or as little oil as you like.

      Fingers crossed sweetie! I bought the Pro 300 because its size was perfect (actually fitted on my worktop / under the cupboards). Older models (C Series) were cheaper but a lot noisier and also taller (not fitting under cupboards in my teeny kitchen). The Pro 750 is pretty amazing, but it’s also more expensive. I love its pre-programmed settings and sleek look. Other than that, it also has the manual mode (1-10), same container & motor than the Pro 300. They are both G Series models. x
